Here are a few pictures of some of the things
people might find a little strange by western
standards. The first time I witnessed the Good
Friday procession of people practicing self
flagellation on their march to 'Calvary' I found
it a little strange myself. After my second year
in the Philippines, it was just something that
took place every year and seemed perfectly
normal. We all need to atone for our sins one
way or another! These photos were taken in
Castilleos, Zambales province. The pictures of
the dogs some might find a little unsettling but
that’s just the way it's done. If you’re going
to prepare them to eat, you’ve got to burn the
hair off first! How does it taste? A little like
beef. It’s usually prepared as apritada or adobo,
in a gravy-like sauce. One thing you notice is
that it’s high in niacin so you get a warm
'flushed' feeling afterwards. You’ll also notice
